Is it a maturity issue when people act differently when they are with you alone as opposed to a group? I've never understood that...How do you know which personality is the real one?

I'm not sure if it's so much a "maturity issue".

Some may not be at their best being alone with another person ... the awkward silences that may occur in a conversation with just two people ... the chance that one person may not find the other person's sense of humor funny. All of that may take time to develop. As strange as it sounds, there's "comfort" in a group setting.

I'm speaking from experience because that's how I am sometimes ...

I learned about personality modification in my social psych class.. We all modify our personalities on a daily basis. This produces professionalism among other things..
but who knows...
